Hello! Thank you so much for stopping by FoodFightThyme. All of the recipes and content you’ll see have been created by me, Lynsey, chef at FoodFightThyme.com. I’m a Seattle native who has always had a passion for creating. Self proclaimed foodie, this blog has come into being as my life’s paths collide. So cozy up, and read on if you’d like to hear more about my journey, it probably sounds a lot like yours.

I have been battling with Autoimmune Disease for about ten years. My AI’s of choice (NOT!) are Hashimoto’s and Endometriosis. Looking back I started having mild symptoms about 15 years ago but it wasn’t until a few years later that my body decided to hit me with a truck, so to speak, to get my attention. I was use to feeling blah, all the time. I figured my crazy job and poor lifestyle choices were the cause, and I was right, sort of. Until one day I started getting migraines, everyday. I wasn’t a stranger to migraines, but not EVERYDAY. I would wake up feeling hungover, then by 4pm, like clockwork I would have a full blown, mind numbing, light sensitive, nauseating migraine. I went to ALL of the doctors, sound familiar? I was put on horrible medicines, given all the tests and told everytime, they didn’t know what was wrong. Until….I found a functional medicine doctor. Within the first meeting, he could tell my adrenals and endocrine system were shot. I was able to work with him to balance everything out as best as possible and felt pretty good!

Flash forward, I knew what foods I needed to avoid and overall how to manage my AI’s but unfortunately, as healthy as I was, my AI’s were catching up. I hit a wall, I did not feel human, like I’d lost myself at some point. Anyone battling with AI knows this feeling all too well. Over the years I had found a core group of doctors that I loved. If you haven’t found a functional medicine doctor and a naturopath, it is my number one recommendation.

My naturopath told me about AIP, or the Autoimmune Protocol and my first thought was, are you NUTS?!??!! I was already gluten and dairy free but no pepper? Eggs? Rice?? NO WINE!?!?! What do I eat????? It took me back another year and another body smack to finally give it a try. If I was going to do it, I was going all in, rip the bandaid, jump in the deep end, no holding back, IN. Within a week I felt like a light switch had gone off in my body. I actually cried because I was feeling good!!! It is rough, in the beginning. However, each day I feel better and better and for those of you suffering with autoimmune symptoms, a rough start is absolutely a trade I’m willing to make to feel human again.

So, in true to myself form, I decided to merge my passions for food and creation into a new adventure, FOOD FIGHT THYME. My goal is to make meals so satisfying that you won’t even remember there is food out there you’re missing.
