This is it…..here it is….look no further. This recipe is so easy and makes the best, crispy tortillas. I could have eaten the entire batch in one sitting…..just kidding…..kinda….. Ok moving on….

Here's What You'll Need:

  • Cassava Flour - 1 and 1/3 Cup

  • Olive Oil - 1/4 Cup

  • Warm Filtered Water - 3/4 Cup

  • Garlic Powder - 1.5 TBSP

  • Sea Salt - 1.5 TBSP

Mix all of the dry ingredients together first, then with a hand mixers add in the olive oil, mix, then the warm water, mix.

Divide the dough into 8 equal size balls. If you have a tortilla press you can use that….I’m not that cool. So I grabbed two pieces of parchment and smashed with the flat bottom of my mixing bowl. You want them to spread out and be about the thickness of a half dollar. Remove carefully from the parchment, if the dough rips a little bit no biggie, just press it back together. Next place one tortilla into a DRY, hot fry pan, about medium heat. Give the tortilla a few minutes on each side, moving frequently until with have some nice toasty spots. If you want to use them for tacos, place the tortillas into a large round cup to cool off and hold a taco shell shape! Use a glove,, these are HOT! Fill with your favorite AIP taco goodies and ENJOY!
